Corpus Christi Cabernet

 

These recipes represent some of the many possible ideas for you to utilize this exquisite pasta.  Try some of these and embellish them with your own personal touch.  Explore the Pasta-bilities!

Cabernet Linguine:   This rich wine flavored pasta goes with red meat extremely well.  At least that is what some of our customers have told me.  I don’t eat beef so I don’t know for certain.  I made this for a nice young lady friend with some Mahi- Mahi in a Dijon mustard and caper sauce that was great.  But this recipe came to us from one of our customers-  Take two steaks and season well, (he didn’t specify what kind of steak, and I haven’t a clue) pour on some good cabernet and allow to marinate at room temp for an hour.  Grill to desired doneness.  Meanwhile take a half pound of brown mushrooms and slice into ¼ inch slices and then brown in large skillet with 3 tablespoons each butter and EVOO.  Season well with salt and fresh cracked black pepper.  Add ½ cup Cabernet and reduce by at least one half.  Cook the pasta, drain and toss with some EVOO.  Plate the pasta, slice the steaks and fan out on top of the pasta.  Top with the mushrooms in the sauce and add a bit of chopped parsley for color and serve.
